The Grind Matters More Than the Bean
Every new home barista starts by chasing origin. Ethiopian naturals, Colombian washed lots, a single-estate Sumatran with tasting notes that read like a wine label. It feels like the most important decision in the cup, because it is the one the bag advertises.
It is not. Grind consistency does more for extraction than any origin ever will. A burr grinder producing uniform particles lets water pull sugars and acids at the same rate across the whole bed. A blade grinder produces dust and boulders in the same breath, and the dust over-extracts into bitterness while the boulders sit there contributing nothing but volume.
Buy the cheaper coffee and the better grinder. You can taste the difference on the first pour, and you will keep tasting it every morning for the next decade.
